2. Eggs have high levels of choline, a part of the B-complex vitamins in which low levels has been implicated in liver problems, neurological conditions, and cardiovascular disease. In addition, pregnant women are encouraged to increase their choline levels as it has been shown to avoid neural tube defects among newborns.
3. Egg yolks have high levels of antioxidants — lutein and zeaxanthin to be specific. Both antioxidants have been shown to play a role in the prevention of cataracts, macular degeneration, and other conditions associated with vision loss.
